+Yum yum! So, my husband had to go away for several days on a work trip, where he would be working for 12 hours a day out in dusty, dry oil fields. I wanted to pack him a little something to help cheer him up during his lunch hour, and this recipe for vegan brownies at http://www.vegweb.com seemed PERFECT! Now, I'm not vegan (anymore), just vegetarian now, but I didn't have any eggs or egg substitute products, so this was just perfect. Plus, NO MILK! +Note: I used a Splenda/brown sugar mix, which made the cookie very chewy- yum! I didn't have any flax seed handy, so I just added a teensy bit more flour (maybe a couple tablespoons?). I used my KitchenAid mixer to vigorously whip the water and oil together before adding the dry mix. Also, I only put the cookie in the oven for about 18 minutes (another reason why the cookie was chewy, I think), but that really depends on how well your oven works. Make sure to Pam-spray/oil your pan, too! When it came to cooling, I just popped it into the freezer- it thawed out just fine, and actually, I liked how cold it was. Lastly, I added carob chips (you can find these at Whole Foods, Trader Joe's, or other "health food" stores), which were quite lovely to me (and my husband who said it was "DELICIOUS!"), but make sure you like the taste of them before adding them, since they do not taste like chocolate chips.
